I have a love affair with Chenin Blanc. It’s a grape that is so versatile and so delicious in all of it’s forms. It can be fermented from bone-dry to dessert wine sweet, it can be made still or with bubbles, it can be drunk young or aged in the cellar. It wears many hats and every hat it puts on looks fabulous. The Fouquet Vouvray ‘Cuvee de Silex’ is in the bone-dry camp, it has the acidity to sit in your cellar if you so choose, however I’m of the mind that it’s drinking beautifully right now.
This Chenin Blanc is wonderfully aromatic with notes of white peach, white flowers, lanolin, and crushed rock. Beautiful balance on the palate with ripe orchard fruit, warm wet wool, and poached pear matched with lemony acidity and a long finish. It’s on the lighter side of medium-bodied and very fresh. This wine loves vegetables and it’s very happy alongside goat cheese. Try pairing it with our Spring Vegetable Tart with Chevre. The ripe fruit compliments the asparagus and leeks while the acidity matches that of the goat cheese. It’s a classic partnership.
The ‘Cuvee Silex’ is named for the soil from which the vines grow, clay-siliceous (flint) that lends minerality to the wine. Grapes are farmed organically, hand-harvested, and only indigenous yeasts are used. The juice is fermented and matured in stainless steel to preserve freshness. Chenin Blanc like’s the cooler climate of the Loire Valley where Vouvray is situated. Chenin’s from Vouvray are marked by their high acidity and deep aromatics.
