Gilberto Boniperti’s grandfather used to repeat this over and over again and it’s become one of the basic concepts of his work and life philosophy: full dedication to his vineyards, many hours of manual work, painstaking care for details in following the wine-making process and last but not least the patient wait for the slow and vital ripening of his wines.

 

Tasting:

This pretty little number has an ethereal, delicate nose of rose petal, raspberry, and freesia. It’s bright with juicy acidity in the mouth and flavors of fresh red cherry, raspberry and a trace of spicy licorice. It also has an earthy note, like woodsy mushroom caps. Try this wine with Chicken Cacciatore – the earthy mushroom note in the wine is found in the dish as well, making it a nice pairing.

The ‘Favolalunga’ is 100% Vespolina. The grapes are hand-picked, destemmed and fermented in stainless steel to preserve freshness.  The juice rests in steel barrels for 6 months then in bottle for 4 months before release. Vespolina is thought to be the offspring of Nebbiolo. It has Nebbiolo’s spicy characteristics, although its tannins tend to be softer.
