The vineyards of Fattoria Moretto are located in the heart of the hills of Castelvetro, near Modena, an ancient town famous for Italian sports car production (Ferrari, Lamborghini, and Maserati). Moretto likes to highlight local grape varietal Lambrusco Grasparossa. Yes, I said Lambrusco. Hey, relax! I don’t mean the candied, fizzy stuff that sold millions of cases in the United States in the 70’s and ’80s, relegating Lambrusco to a place of contempt otherwise reserved for wine coolers. I mean real Lambrusco – dry, earthy and slightly bitter yet joyous and refreshing, beloved by millions in Emilia-Romagna.
Almost hot pink in color with bright purple reflections, this pretty, frothy sparkler gives off a hints of ripe cherry and apple on the nose. Very quaffable with flavors of Visciole cherries. It’s dry, clean and bright. It’s remarkably food-friendly and a perfect festive bottle to serve with appetizers – from flatbreads to finger foods. We love how it goes with a sweet and earthy soup like Roasted Butternut Squash and Jerusalem Artichoke Soup with Truffle Oil. It’s a lovely contrast.
