This rosé, made from 100% Syrah, is made from grapes sourced from vineyards situated on soils where fossilized dinosaur eggs have been found (hence the Velociraptors on the label). Grapes are harvested at night instead of during the intense heat of the day. This is a benefit for workers picking the grapes, but it is also when the sugar levels in the grapes are more stable, the quality and acid levels are better and the resulting wine is fresher and more lively.
This is an exuberant rosé – aromatics of ripe cantaloupe, spicy florals, citrus, and apricot burst from the glass. On the palate notes of melon, raspberry, guava and other tropical fruits fill the mouth. Acidity is medium and the wine is nicely balanced with a long, chalky finish. Immensely food-friendly, this rosé is excellent with anything from grilled chicken, vegetables, to even heartier dishes like lamb. However a less obvious, but equally satisfying pairing is our recipe for Spanakopita Bread Pudding.
This wine is from the Pays d’Oc territory which winds along the Mediterranean Sea, weaving itself along 4 departments in the Languedoc-Roussillon region. A combination of steep slopes, hilly peaks, garrigue and the salty sea, the Pays d’Oc landscape typifies the unique charm of the vineyards in the south of France.
