Olivier Morin left his music career to make wine in the 1990s, and we are grateful he did! The soils here in Chitry, just south of Chablis, mirror those Kimmeridgian limestones, full of fossilized sea shells. They bring an incredible salinity to the wine that begs to be paired with seafood!
