Bresca Dorada Corbezzolo Honey
This intense - and intensely rare - honey is like nothing you've tried before. Bees pollinate Sardinian strawberry trees, which only bloom for three months in the autumn and produce significantly less nectar than most flowers. The resulting honey has a bitter and intensely herbal bite, rounding out to notes of golden tobacco on the finish. Used for centuries on the island for both medicinal and culinary purposes, corbezzolo honey's bold flavor calls out for a pairing like fresh ricotta or a sweeter pecorino (we like Casa Madaio's Calcagno), or stirred into your tea when you're under the weather.
Raw Corbezzolo has a tendency to crystallize - that's a sign of high-quality honey. If you prefer a drizzle-able honey, pop the jar into a warm water bath and stir until it's liquid again.
