Cati Ribot is one of two female natural winemakers in Mallorca, and her project is a force to be reckoned with. Cambuix directly translates to “bedhead” which is how the vineyards looked at harvest after a hail storm. Ribot’s persistence and resourcefulness give us a gorgeous rosé with striking minerality and salted fruit quality.
