There are pockets of people throughout Spain doing good work, making good wine with more of a natural, traditional approach. Juan Antonio Ponce is one of them. He began Ponce at the young age of 23, after working for a larger winery. Assisted by his father, he farms one of Spain’s most widely planted and under-appreciated varieties: Bobal. This grape’s super dark skins yield dense, chewy wines. It used to be that Bobal only showed up as a supporting actor for more popular varieties. But with Ponce and other young producers, it’s getting its moment in the sun. Look for blackberry, a whiff of baked cherries, and a savory edge.
