Out of all of Lilian Duplessis’s offerings, I find the Vaillon to be the most open and exotic as well as my favorite to drink in its early years. The southeast exposure of this premier-cru site gives way to luxurious fruit and enticing wildflower. Laced with pointy minerality, juicy acidity and finishes with energy and zip. A short 6 month sleepover in some old barrique lends softness, complexity and depth.
Lilian is the 5th generation at this domaine that started back in 1895. He took over from his father Gerard back in ’99 and has since become one of very few certified organic winemakers in Chablis. With vineyards in Petit Chablis all the way up to his grand-cru Les Clos bottlings, Lillian works the vineyard and cellar with complete respect to nature. The result is a perfect reflection of his vineyards, his style and the uniqueness of vintage.
