Cyriaque Rozier’s makes the kinds of wines we love to drink - organically and biodynamically farmed, elegantly balanced, and displaying their distinct terroir. The lion’s share of his production is Cabernet Sauvignon, a grape varietal that is outside of the constraints set for the A.O.C. in the Languedoc.
This means he must take a Vin de Pays d’Oc designation. The wines don’t fetch as high a price, but he gets to make his wines his way, and we reap the rewards; well-made wine at an incredible price.
This 100% Cabernet Sauvignon gives up characteristic aromatics - black fruit, spice, and savory herbal tones. On the palate, blackberry, black currant, and bright black cherry mingle with dusty tannins, earthy mulberry notes, and a peppery finish. Medium-bodied it would pair nicely with fatty sausages or roasted Leg of Lamb.
