Here’s Valle Itata’s answer to Italian table wine. Pipeño is made from Pais and takes its name from the open-top pipas (large vats) in which the easy-drinking wine is made. Pipeño checks all the boxes of today’s natty wine movement — but it dates back to the 16th century. Since then, it’s been made mostly for and by regional farmers. Until very recently, it wasn’t considered as a prime option for export. This is humble, delicious farmer juice. Slightly hazy, and ripe, it’s one of the most down-to-earth wines we know. It’s a breath of fresh air rippling with sun-warmed strawberry, blood orange, and campfire aromatics.
