The region of Grignan-les-Adhemar is so small that only 32 vignerons ply their trade there. When Laurent Clapier inherited his family’s vines, he decided to do things differently and immediately made the switch to organic. This bottle is exciting — a testament to patience and trust in the process. When Laurent was vinifying his fruit from 2016, this batch stopped short. Instead of restarting it with chemicals, he decided to wait and see what happened. Four years later, after a slow and steady fermentation, we have l’Imrévu. Look for ripe cherry, blackberry, baking spice, and a hint of tannin.
