Uplands Cheese Pleasant Ridge Reserve

Renowned cheesemaker and champion for sustainability Andy Hatch is making some of the most delicious and widely respected cheeses in the country. Andy and his team practice rotational grazing with their herd of mixed breed cows. Each day the cows are moved to a new pasture and rarely spend any time in the barn other than milking. Pleasant Ridge Reserve is a raw cow’s milk, washed rind, Alpine-style cheese produced only in the summer months while the cows are enjoying the lush pastures of southern Wisconsin.
