Willa Deely of Disciple was inspired by California-based Matthiason’s peach and Chardonnay cuvée for this wild apple and yellow peach co-ferment. If ever there was a breakfast wine, this is it. Notes of basil and whipped cream, grilled pineapple and salt. It’s a testament to how elegant cider and stonefruit can be in the right hands.
