Come time for harvest, if one variety didn’t pull through due to unforeseen weather, they were still able to make harmonious wine. Each variety brings its own attributes to the table — some varieties offer acidity, others body, and others aromatics. So while they’re not common, these wines speak to history and place in a way that other blends simply cannot.
