Ah, pétillant-naturel. It’s about as old school as sparkling wine gets — there’s a reason it’s called méthode ancestrale. Unlike Champagne, which gets its bubbles from a secondary fermentation in bottle, pét-nat is made by finishing the fermentation process in the bottle. Keeping it all in-house, so to speak.
