The Ota family has been brewing sake in the Shiga province for centuries — plenty of time to perfect their craft! This one-year-old-sake sees the addition of just-ripe ume fruit (commonly called plum but more similar to a sour apricot.) It's aged before release to further develop the flavors — you'll find notes of marzipan and dried apricot!
