Morastello Bianco dell'Appennino Frizzante La Riva Col Fondo 2022

Luigi Ottonelli is an optometrist, winemaker, and something of a history buff. It’s why his Col Fondo bears the name “La Riva.” During WWII, Riva Ridge was the site of a turning point battle that allowed the Allied Powers to break the Nazi line that ran across northern Italy. It was a natural choice for Luigi, who started making wine in an effort to preserve the culture and vineyards of his town.

This is natural Col Fondo at is crunchiest and most delicious. It comes from high elevation, steep mountain vineyards with a short growing season. It’s made from a trifecta of indigenous varieties like Malvasia, Pignoletto, and Trebbiano. This Col Fondo is exactly the kind of wine you want to dig into over cheese, charcuterie, and crackers…specially the Parmigiano Reggiano that Emlia Romagna is known for.

Producer: Morastello

Country: Italy

Region: Emilia-Romagna

Variety: Malvasia, Pignoletto, Trebbiano

Apricot, almond, brioche

If you like this, you should consider other sparkling white wines made with the ancestral method. Many you’ll find labeled pét nat, another term for ancestral method.

- Col Fondo is sometimes confused with Prosecco, which comes from the same area. However Col Fondo is made with the ancestral method and Prosecco is made with the Charmat method.
- Luigi’s wife Simonetta works with him in the vineyards, and together they’ve rehabilitated about 4 hectares of vines scattered in small plots around the town of Fanano.
- Their vines are certified organic and they vinify with native yeast.

We think this Col Fondo from the Apennines would do well with a savory, umami rich seafood risotto. It takes a little bit of patience, but it's well worth it.
