Pierre Bories VdF Rouge Hippolyte 2022

Making wine naturally isn’t easy. Many of our favorite climates have to contend with damp, cold, and fog that can lead to vine diseases and other issues. But the Languedoc-Roussillon is blessed with a warm, dry climate and plenty of cleansing ocean winds. Long story short, it’s a great place to make natural wine: The Languedoc is the largest producer of organic wines in the country.

Pierre Bories family has been making wine in the region for generations at the Château Ollieux-Romanis. The wines are serious representations of the Corbières terroir. But more recently, Pierre has started making approachable, immediately-drinkable wines under his son’s name, Hippolyte.

This blend of Carignan, Grenache, and Syrah is a great everyday red. It’s full of bright red fruits with a hint of thyme and licorice. Well balanced, easy to drink, and super satisfying to share at the table. Sunny tractor and vineyard label courtesy of Pierre’s son.

Producer: Pierre Bories

Country: France

Region: Languedoc-Roussillon

Variety: Carignan, Grenache, Syrah

Strawberry, raspberry, thyme, licorice

If you like this fresh, somewhat herbal red from the Languedoc-Roussillon, you should look for other red blends that feature Grenache and Syrah. You’ll find the bulk of them in the Southern Rhône Valley.

- The Languedoc and Roussilon might be joined by a hyphen today, but some somms argue the regions should be considered separately because of how different they are.
- Historically, the Languedoc was known for producing large quantities of mediocre wine. Today, conscientious winemakers like Pierre Bories are turning that rep around.
- The warm climate and consistent wind make it easier for winegrowers to farm organically and biodynamically.

Pair Your Club Wine With...

We think this fruit-driven red blend would pair well with something hearty, like duck. You could go for a jammy berry sauce, or do something a little more pared down like this peppery red wine sauce.

Wine Club Who?

Our wine clubs—Thirst, Sauvage, and Dirt— and our Cheese Club are available for local pickup in Burlington and Stowe, Vermont. They're a great way to learn more about wine and cheese, expand your palate, or just get to try something new every month. Every wine and cheese is selected by our somms and comes with detailed tasting notes and recipes to pair.
