The Languedoc is known mostly for its red wines, so everytime we find a white from the warm, sunny region we get a little excited. Especially when it’s from a producer with such deep ties to the area. Pierre Bories’ family has been making wine in Corbières for generations at the Château Ollieux-Romanis, and he recently began making more immediately drinkable natural wines under his son’s name, Hippolyte.
This blend of Chenin and Chardonnay is surprisingly fresh and mineral given the region’s warm climate. It’s full of green apple, ripe citrus, and stone fruit notes. Like all of Pierre’s wines, the grapes that go into this wine are farmed organically.
