Making wine naturally isn’t easy. Many of our favorite climates have to contend with damp, cold, and fog that can lead to vine diseases and other issues. But the Languedoc-Roussillon is blessed with a warm, dry climate and plenty of cleansing ocean winds. Long story short, it’s a great place to make natural wine: The Languedoc is the largest producer of organic wines in the country.
Pierre Bories family has been making wine in the region for generations at the Château Ollieux-Romanis. The wines are serious representations of the Corbières terroir. But more recently, Pierre has started making approachable, immediately-drinkable wines under his son’s name, Hippolyte.
This blend of Carignan, Grenache, and Syrah is a great everyday red. It’s full of bright red fruits with a hint of thyme and licorice. Well balanced, easy to drink, and super satisfying to share at the table. Sunny tractor and vineyard label courtesy of Pierre’s son.

If you like this fresh, somewhat herbal red from the Languedoc-Roussillon, you should look for other red blends that feature Grenache and Syrah. You’ll find the bulk of them in the Southern Rhône Valley.
